I believed that we did a full circle and are coming back to reality where a decent burger is nothing fancy and rather perfect representative of street food, so you can have one in a street food kiosk and not in a high-end restaurant. This joint's praiseful feedback suggested I was thinking right, but the things turned out to be the opposite. The beginning was promising. The burger joint is located a few blocks away from where I live. On the way back, I grabbed some excellent Russian craft IPA to accompany my burger, came home, poured a pint, unwrapped the burger, took a bite... and sheer disappointment hit me. I knew right away what was wrong. They served me a babushka (grandma) burger. That's right, one where the patty is made with the addition of onion. I hate it. I understand that there is a common recipe for patty-cakes in the CIS countries that includes onions, and it is good but with mashed potatoes and not in a burger. You don't need to reinvent the wheel when making a good burger patty. Things vary a bit, but the general formula is 80% lean, 20% fat ground beef (I prefer chuck), seasoning (salt, pepper, etc.), binders (egg, milk, crumbs, etc.). That's it – no onion. It just tastes awful. I like burgers a lot, but I eat them rarely, so I want that experience to be memorable and in a good way. So, the lesson I've extracted from the said situation is that it is still worth splurging for a good burger in Kazakhstan.
